In this episode of the Paris Paysanne Podcast I'll be talking with two innovative people involved in the zero waste movement in the world of craft beer. First I'll speak with Franck Grossel, the founder of Instead Mobilier which builds “brewed” furniture made from spent grain. Then I'll talk to Elsa Raverdy of Brewsticks, a company that takes spent grain and turns it into tasty, zero waste snacks. Franck Grossel founded Instead Mobilier as part of his graduate thesis at design school in 2018. As an eco-conscious beer lover, Franck Grossel was driven to combine his passion with his professional experience as a cabinet maker by creating Instead Mobilier. His innovative enterprise takes spent grain and gives it a new life in the form of bar ready stools and other accessories. In a previous life , Elsa Ravery was a specialized consultant, focusing on the wonderful and exciting world of waste management and circular economy. But after years working on reports and studies, many of which ended up gathering dust on a shelf, Elsa figured it was time to act and get involved in more useful things. Things that actually contribute to change the dominant system. Starting with Brewsticks, which uses organic spent grain to make tasty zero waste treats. As a Certified Cicerone ® she has spent the last decade working within the craft beer &amp; food world creating multi-sensory programs for many facets of the industry from bartenders &amp; distributors to drinkers and enthusiasts.  In 2013 Miss Gabe joined the Brooklyn Brewery team and has since worked in a multitude of different roles continuing to fuel her passion for building bridges of education. Since 2015 she has spent much of her time traveling around the world for Brooklyn teaching and speaking at festivals such as Good Beer Week (Australia), Olut Expo (Finland), Planet Biere (France), and Craft Beer Rising (UK). Miss Gabe advocates for the power of the non-traditional classroom and using beer as a tool for social change. In this episode of the Paris Paysanne Podcast I talk with Debra Kemp of CheeseFox about bringing artisanal English cheese to France!Debra Kemp trained as a sommelier at L'university de Vin at Suze La Rousse in the Drôme, after having worked as a wine merchant in Paris, with no real experience.  She cheese bug back then in 2010 but then took a while to get round to getting it started.  After stumbling across a Lancashire guy who'd set up shop in Cumbria, she was introduced to several artisan cheese makers, and the rest is history- in the making. Add in the egg and continue blitzing or chopping. Add in cold water until the mixture binds together. USe the palm of your hand to smooth out any lumps of butter. Knead into a ball and keep in the fridge for about 15-30 minutes, until malleable and easy to roll out. Roll out the crust to 4 cm thick and lay into a pie mould. Prick with a fork and blind bake for about 15 minutes (10 minutes with pie weights, 5 without).Frangipane filling:200 g almond flour200 g sugar200 g softened butter4 eggs200 g your choice of fruit (Recommended: peaches, apricots, plums, berries, apples)Preparation:Cream the soft butter and sugar together, until you reach a smooth, whipped consistency. Add in the almond flour and the eggs. Pour the filling into the blind baked pie crust. Nestle your favorite fruit into the filling and bake again for 30 minutes, until the filling has set in the middle.Top with powdered sugar or a dollop of crème fraîche. Or both! You can even add on more fruit on the top for an incredibly luxurious experience. Option: if you'd like to skip the pie crust, you can create lovely little ramekins of frangipane and fruit that can be eaten with a spoon directly from the mould.

Add in the egg and continue blitzing or chopping. Add in cold water until the mixture binds together. USe the palm of your hand to smooth out any lumps of butter. Knead into a ball and keep in the fridge for about 15-30 minutes, until malleable and easy to roll out. Roll out the crust to 4 cm thick and lay into a pie mould. Prick with a fork and blind bake for about 15 minutes (10 minutes with pie weights, 5 without).Frangipane filling:200 g almond flour200 g sugar200 g softened butter4 eggs200 g your choice of fruit (Recommended: peaches, apricots, plums, berries, apples)Preparation:Cream the soft butter and sugar together, until you reach a smooth, whipped consistency. Add in the almond flour and the eggs. Pour the filling into the blind baked pie crust. Nestle your favorite fruit into the filling and bake again for 30 minutes, until the filling has set in the middle.Top with powdered sugar or a dollop of crème fraîche. Or both! You can even add on more fruit on the top for an incredibly luxurious experience. Option: if you'd like to skip the pie crust, you can create lovely little ramekins of frangipane and fruit that can be eaten with a spoon directly from the mould.

On March 7th, 2017 the American Library in Paris hosted an evening about food with guests Kristen Beddard, Jessie Kanelos Weiner and myself.  We spoke about local produce and how Paris is changing when it comes to eating locally and in season. The discussion was graciously moderated by food writer Alexander Lobrano. This podcast is a live recording of the event, beginning with ALP's own Grant Rosenberg who was kind enough to coordinate the event and introduce us to a full audience. Kristen Beddard is the American founder of The Kale Project, a successful initiative to reintroduce kale to France. Through her work with local French farmers, le chou kale can now be found at various outdoor markets and supermarkets. Along with offering private cooking classes for small groups in her home, Terresa also gives market tours in Paris and organizes cooking classes and wine tastings in the beautiful Loire Valley. Lina Bou is the founder of My Taste of Health. She is also the chef at Café Smorgas where she prepares traditional Scandinavian cuisine with her personal nourishing, healthy spin. Anna Brones is a Paris-based author and founder of the site Foodie Underground, where she writes about real food for real people. Add in the sugar and stir with a wooden spoon until sugar has dissolved. Add the tea bags and let steep until the tea has cooled.Remove the tea bags and pour the tea into a glass jar (or two depending on what size of jars you are using) with the previously brewed kombucha and the kombucha mother.Cover the mouth of the jar with cheesecloth, gauze or a tea towel, and wrap a rubber band around it to hold it in place.Let ferment in a cool, dark place for 7 to 10 days. You can taste it to determine if you want to bottle it or if you want it to keep fermenting longer.Use a funnel to pour the brewed kombucha into glass bottles. Store at room temperature for about three days, then transfer to the refrigerator for storing.
