This week we're welcoming in Hagen Dost &amp; Bill Wesselink of Dovetail Brewery in Chicago to talk about their love of rauchbiers and their very awesome coolship, which they use for all of their beers. The duo met in brewing school and for the last several years have turned Dovetail into a destination for beer fans far and wide. They specialize in lagers, and have begun sending their beer out of state to thirsty patrons. From talking about how the pandemic has affected their business, to the unique flavors that arrive in their beers via the CTA's Brown Line, these two brewers have a healthy respect for tradition but are also bringing good humor to the beer scene. Justin pulled out some great bottles from his bodega (buy a tote bag) and we had some real fun with the black glass.
