The history and future of a parallel universeIn this chapter we are exploring Sotol and the craftsmanship behind it. Though there are many parallels to the Agave universe and Sotol makers suffered from the same injustices as their maguey cousins, it is a different world with unique challenges and opportunities. Isaac and Sergio are behind two separate brands but have the same mission, namely that Sotol is recognized as a high quality artisanal product that stands for itself. They share their know how of the history and give us their outlook on the future.  There is also a fascinating part about rattle snake venom. S3.C5: The world of Sotol with Isaac Montes and Sergio Gonzalez, part 1

La historia del sotol es antigua y poco conocida en México, tal vez también por los propios nativos de lo que ahora se reconoce como el territorio con la declaratoria de la Denominación de origen Sotol (DOS).  Sin embargo, es parte del patrimonio de Chihuahua y de los ancestrales usos por milenios del sotol (Dasylirion sp.) por pueblos originarios de esta región Chihuahua-Texas que no tuvieron límites entre paises hasta la mitad del siglo XIX.  Isaac nos habla de Janos, de la historia poco documentada del sotol y de lo todavía incipiente que es el sector del sotol en México así como su exclusión de protección en el tratado de comercio recién firmado con América del norte donde existe la categoría del sotol de texas.  Te invito a conocer una historia fronteriza con procesos similares a los de los mezcales mexicanos y algunas particularidades propias. Bio Isaac Montes nació en Ciudad Juárez en 1983 tiene una licenciatura (2007) y una Maestría (2010) en Ciencias Políticas de U.T.E.P (The University of Texas at El Paso).  Su marca Casa Montes produce Sotol Joven 40 ABV con Triple Destilación y un Licor de Café con Sotol 14 ABV.   El lanzamiento oficial de Sotol Casa Montes fue en la vinata Janos, Chihuahua justamente en el año de la pandemia COVID-19.--- Support this podcast: https://podcasters.spotify.com/pod/show/ana-g-valenzuela-zapata/support
